There are already companies dedicated to creating plant-based gelatin, seafood, chicken and beef. A Finnish company, however, called Gold&Green Foods, is taking it a step further and is focused on a very specific item: pulled pork, without the pork.
The food technology startup, based in Helsinki, calls the product Pulled&Shredded, or “pulled oats”, and it is made from oats and broad beans from Finland and Sweden. The company was founded by Maija Itkonen, an industrial designer, and Reetta Kivela, a food scientist, and the products are vegan, free of GMOs, and are considered to be complete proteins. Kivela described the process:
“The oats are sheared and heated under the right conditions and combined with the beans. The amino acids that are lacking in oats are in the beans, so they are a good combination.”
The flavors so far include nude, kaffir lime with sesame and ginger, and tomato with smoked pepper and cilantro. While the company received $327,000 during its first round of investment, and are currently testing small batches in restaurants and food shops, they will need another round of funding in order to begin large-scale production. According to the website, the products should be ready to sell in both Helsinki and Stockholm in late 2016, and could later expand into different markets.
