The Today Show Features Vegan Chef Chloe Coscarelli & Cauliflower Mac ‘n’ Cheese
Yesterday, vegan chef Chloe Coscarelli was the special guest on NBC’s morning news/talk show The Today Show. Coscarelli showed hosts Hoda Kotb and Jenna Bush Hager how to make some “healthy yet yummy” vegan comfort meals:
“Vegan chef Chloe Coscarelli is in the TODAY kitchen with Hoda Kotb and Jenna Bush Hager to demonstrate how to make some healthy but delicious comfort food that’s perfect for the cold weather: cauliflower mac ‘n’ cheese and Brussels sprout pasta.”
The chef used roasted cauliflower, garlic, cashews, lemon juice and truffle salt to make a creamy umami cheese sauce and topped the dish off with toasted bread crumbs.
She also presented a charred Brussels sprout pasta dish. Hager asked Coscarelli if she was a vegan, since for her to create a dish so delicious, she “must be an expert.”
