Instructions:
Soups are easy; you just need a base of softened garlic and onions with your favourite oil, sauteed veg, or what I call the “main event”, combine and blend and serve. Could not be more simple. I use my NurtiBullet but you can use a hand blender… or not blend!
Ingredients:
2 | Courgette/Zucchini |
3 cloves | garlic |
1 | onion |
1 | Vegetable stock |
1 dash | Liquid smoke (Optional) |
Steps:
Sautee some garlic and onions in oil.
Chop and add the courgette/zucchini to the garlic and onions.
Once softened add some liquid smoke if you wish for extra flavour, only a tiny bit is required to change the flavour, and it’s not to everyone’s taste! So be careful.
Turn off the heat and leave to settle. Make some stock and combine the stock with the veggies.
Let that cook through, leave to cool, then you can blend (or not) and serve. Nothing could be simpler. This method works for any soup really. The flavour is very refreshing.
