Ingredients:
2 | avocados (cubed) |
2 | Tomatoes (diced) |
1⁄2 cup | onion (diced, with a few thin slices of the remaining onion for later) |
1 teaspoon | garlic (minced) |
1⁄4 teaspoon | Cayenne pepper |
1 teaspoon | salt |
1 | lime (juiced) |
2 | vegan flour tortillas |
1 | green bell pepper (thinly sliced) |
1⁄4 cup | coconut oil (for frying) |
1⁄2 cup | Vegan sour cream |
1 pinch | cillantro (chopped, optional) |
Steps:
Cube the insides of two avocados, add them to a bowl and mash them with a fork.
Add two diced tomatoes, 1/2 cup of diced onion, 1 tsp of minced garlic, 1/4 tsp of cayenne pepper, 1 tsp of salt and the juice of one lime. Mix all the ingredients together in the bowl.
Cut two vegan flour tortillas in half (making four pieces) and place the avocado mixture in the middle of each piece.
Add two thinly sliced pieces of green bell pepper and yellow onion to each piece, surrounding the mixture.
Wrap the tortillas and secure them with a toothpick.
Add coconut oil to pan and set on high. Fry two of the fajitas at a time, 1 minute on each side (2 minutes total). Place them on a tray and skewer them with a stick.
Add some cilantro garnish (optional) and serve with 1/2 cup of vegan sour cream.
