Stuffed Avocados

A vegan South American avocado dish that fuses Asian and Latin influences.

    Yields: 6 Servings
    Instructions:

    Ingredients:

    1⁄4 cup vegan vanilla yogurt
    1⁄2 cup Vegan mayo
    4 tablespoons Orange Juice
    3 shallots (chopped)
    3⁄4 teaspoons salt
    1 lime (squeezed)
    3 avocados
    1⁄2 cup cherry tomatoes
    2 serrano chilis
    1 cilantro (just enough for garnish)

    Steps:

    In a small bowl combine the vegan vanilla yogurt, vegan mayo, orange juice, chopped shallots, salt, and juice of the lime.

    Whisk and then refrigerate for at least 20 minutes, but you can chill it for a couple hours if you prefer.

    Halve the avocados, halve the cherry tomatoes, and slice the serrano chilis.
    Spoon the cherry tomatoes into the avocados.
    Spoon the chilis on top of the tomatoes.
    Drizzle the dressing on top.
    Garnish with cilantro, and bon appétit!
