Ingredients:
2 cans | Faux Tuna (Drained) |
750 grams | Four Bean Mix (Drained, rinsed) |
4 | Tomatoes (Deseeded, chopped) |
2 | Celery Sticks (Trimmed, finely chopped) |
1 | Small Red Onion (Thinly sliced) |
1 cup | Flat-leaf Parsley Leaves (Chopped) |
1 | Large Lemon (Rind finely grated, juiced) |
1 | garlic cloves (Crushed) |
1 tablespoon | Extra-Virgin Olive Oil |
1⁄2 teaspoon | Caster Sugar |
Steps:
Flake faux tuna and place in a large bowl. Add beans, tomato, celery, onion and parsley.
Make lemon dressing: Combine lemon rind, 2 tablespoons lemon juice, garlic, oil and sugar in a screw-top jar. Secure lid and shake until well combined.
Pour dressing over salad. Season with salt and pepper and stir to combine. Serve.
