Instructions:
Prepare noodles as directed, then mix everything together in one big bowl!
Ingredients:
1 package | Macaroni noodles (apx 4 cups) |
3 | Roasted red pepper (chopped) |
1 can | Olives (chopped) |
3 | Green onion (chopped) |
6 | Sweet pickles (chopped) |
1⁄2 cup | Vegan mayo |
1 tablespoon | Red wine vinegar |
3 teaspoons | Sugar |
1⁄4 teaspoon | salt |
1⁄4 teaspoon | Pepper |
1⁄4 cup | Vegan milk alternative |
1 | Pickle juice (a splash for flavor!) |
3⁄4 cups | Celery (Optional) |
Steps:
Heat noodles as directed on packaging. When finished, set aside.
Chop/dice up olives, roasted peppers, sweet pickles, green onions, and celery (if adding).
When done, set aside.

In med sized bowl, mix together vegan mayo, red wine vinegar, sugar, salt, vegan milk alternative, and a splash of pickle juice. Set aside.
Add all ingredients into big bowl and mix together. Salt and pepper to taste.
