For the base

1 cup walnuts

1/2 cup rolled oats

1 cup dates

1/4 tsp sea salt

2 tsp coconut oil

1 cup coconut milk

1/4 cup vegan chocolate chips

3 tbsp cacao powder

3 peppermint sticks

For the frosting
-
2-3 cups water

1/3 cup coconut milk

3/4 tsp peppermint extract

1/2 cup vegan chocolate chips

3 peppermint sticks

Place the 6 peppermint sticks into a bag and crush them with a rolling pin. You will use half for the base and half as a topping. |

Add the walnuts and oats to a blender and blend on high until it resembles a powder or flour. Place the mixture into a bowl. |

Blend the dates, sea salt and coconut oil on high until a somewhat liquid consistency is achieved. Add the coconut milk and blend on high until it is smooth. |

Add the walnut/oat mixture back to the blender, as well as the chocolate chips, cacao powder and half (3) of the crushed peppermint. Blend on high until everything is combined. |

Line a tray or container with parchment paper and pour in the mixture. Even it out and place in the freezer for 30 minutes. |

In a pot, bring water to a boil and add the coconut milk, peppermint extract, chocolate chips and stir the mixture until completely smooth. |

Pour the mixture over the base and spread it evenly. Sprinkle the remaining peppermint chunks over the frosting and place it back in the freezer for 30 minutes. Enjoy! |
